| 8 ounceswhole wheat pasta; spaghetti, linguine, angel hair |
| 2 Salmon filets; cubed |
| 4 ouncesSun-dried tomatoes; in oil |
| 1/2 cupWhite wine; not cooking wine! |
| 3 tablespoonsLemon Juice |
| 1 tablespoonCapers |
| 1 cloveGarlic; pressed |
| 3/4 teaspoonItalian seasoning |
| dashBlack pepper |
| 16 Kalamata olives; halved |
Pasta with Salmon, Sun-Dried Tomatoes and Capers Preparation
Cook pasta according to package directions.
Heat the oil from tomatoes in a non-stick skillet (if your tomatoes did not come in oil, heat about a tablespoon of oil and add the tomatoes immediately). Add salmon and cook until cooked through. Add the other ingredients. Bring to a boil and cook for about a minute. Toss the pasta with the sauce. Serve with Parmesan cheese.
Notes
If you don't like fish, you can make this without salmon. I have tried this recipe without the olives, as well, and it is still good.
