This is a dip that is similar to salsa. We eat it with tortilla chips but it is a fabulous addition to any Mexican dish. Try making fiesta burgers and add this fabulous mixture to top your burger. MMMmmm! Or use it to top your taco or burritos. You could also add some jalepenos to the mixture if you like the spice but it is super without.
Yield: 8 Servings Ready in 15 minutes

| 1 canBlack Beans; drained |
| 1 canDiced tomaotes w peppers (Rotel); undrained |
| 1 canBlack eyed peas |
| 1 cupFrozen corn OR 1 can drained |
| 1/4 cupGreen onions; diced |
| To tasteCilantro, Fresh; chopped |
| 1 teaspoonSalt; or to taste |
| 2 wholeAvocados; diced |
Cowboy Caviar Preparation
Mix all ingedients together and let set for 30 minutes. Serve immediately after with tortilla chips.
