| 1 cupMayonnaise |
| 1/4 cupDijon mustard |
| 1/4 cupCider Vinegar |
| 2 1/2 poundsBoneless chicken |
| 1/8 cupCanola Oil |
| 1/3 cupcajun seasoning |
| 1 large carrot; grated |
| 1/2 Red onion; minced |
| 3 scallions; sliced thinly and diagonally |
Blackened Chicken Salad Preparation
Heat oven to 375.
Mustard Dressing
Mix mayo, mustard, and vinegar in a large mixing bowl. Set Aside.
Salad
Brush one side of the breasts with oil. Sprinkle with Cajun seasoning, pressing it in.
Turn breasts over and repeat.
Heat cast iron very hot. Place chicken in the pan.
Cook without moving them for 5 min. each side.
Transfer the skillet to the oven or place chicken on a cookie sheet and finish cooking in oven at 375 for 10 min or until golden brown.
Chill breasts completely and cut into bite sized pieces.
Transfer the chicken into the bowl with the dressing. Add carrot, onion, and scallions. Mix well.
Notes
Blackening chicken in the house is smokey and messy. Grill the chicken or cook in the cast iron skillet on the grill outside.
