EGGPLANT AND NOODLE CASSEROLE
Original recipe makes 4 Servings
| 8 ounceEgg noodles |
| 1 cupSour cream |
| 1/2 teaspoonCavenders seasoning |
| 1/2 cupOnion; chopped |
| 1/2 cupBell pepper; diced |
| 1 mediumEggplant; peeled & sliced |
| 1 poundItalian sausage |
| 28 ounceSpaghetti Sauce |
| 8 ounceMozzarella; shredded |
EGGPLANT AND NOODLE CASSEROLE Preparation
Cook noodles as directed on package. Drain , Add sour cream and cavenders. Place in 9X13 pan
Saute onion and peppers. Add on top of noodles
Brush eggplant with olive oil and broil about 6 minutes per side until light brown. Add to pan
Brown sausage and drain . Add on top of eggplant
Spread Spaghetti sauce on top. Cover with foil.
Bake in oven 350 degrees for about 40 minutes. Remove foil, top with cheese and bake 5 minutes more or until cheese melts.
Let sit for 5 minutes and serve
