3 CupsBarley-pearled; Cooked
1/2 English cucumber; Chopped in 1/2" cubes
1/2 CupRed bell pepper; Chopped med. size
3 WholeGreen onions; Sliced include some of the tops
2 TablespoonsFresh chives; Chopped
2 tablespoonsLemon juice
1/3 CupOlive oil
2 teaspoonsgarlic cloves; Crushed
1-2 teaspoonssalt; To taste
2 StocksCelery; Chopped small
1/2 teaspoonFresh ground pepper
Seafood sensation; 2 cups or the shrimp and crab below
6-8 eachCherry tomatoes; Cut in half
1 cupShrimp
1 cupImitation Crab Meat

Seafood sensation with barley Preparation

Mix all ingredients together when the barley is completely cooled down. Stir a couple times before serving.

Notes

I cooked my barley in my BRK pressure cooker with some vegetable broth. Took about 20 mins.

***seafood sensation is a brand name product but you could easily substitute tiny cooked shrimp and fake crab.
