Prepare gnocchi according to package directions. Drain, reserving 1/4 cup pasta water.
Brown bacon in a skillet over medium heat until crisp, about 7 minutes. Remove bacon from skillet, and drain on a paper-towel-lined plate.
Add onion to bacon drippings in skillet and saute until softened, 3 minutes. Stir gnocchi and bacon in with onion; cook until heated through, 1-2 minutes. Remove skillet from heat and stir in reserved pasta water and Parmesan. Stir in parsley; season with salt and pepper.
