Suggest a better descriptionRemove rind and surplus fat from chops, cut chops into large strips. Put into bowl with combined
cornflour, dry sherry, soy sauce, hoisin sauce, sesame oil, sugar and salt. Leave to stand one hour
Drain pork, reserve marinade. Heat oil in pan or wok, add pork, toss until golden brown, about 10
minutes
Put water, plum sauce and reserved marinade in saucepan. Stir until combined. Stir until boiling,
remove from heat.
Add prepared sauce to wok, stir until sauce boils and thickens. Reduce heat, simmer. covered 15 minutes.
