Apple Cole Slaw
Original recipe makes 6 Servings
| 3 cupsCabbage; chopped |
| 1 Red apple; unpeeled, cored and chopped |
| 1 Granny Smith apple; unpeeled, cored and chopped |
| 1 Carrot; grated |
| 1/2 cupRed bell pepper; finely chopped |
| 2 Green onion; finely chopped |
| 1/3 cupMayonnaise |
| 1/3 cupBrown sugar |
| 2 tablespoonsFresh lemon juice |
| 1 teaspoonCider Vinegar |
Apple Cole Slaw Preparation
1. Cut apples and coat in 1 tablespoon lemon juice to keep apples from turning brown.
2. In a large bowl, combine cabbage, red apple, green apple, carrot, red bell pepper, and green onions.
3. In a small bowl, mix together mayonnaise, brown sugar, cider vinegar, and remaining lemon juice. Pour dressing over salad.
