Our familys recipe for roasting vegetables.
1. Heat oven to 400 degrees.
2. Rub cut side of garlic over baking dish and place garlic in dish. Add vegetables. Drizzle with oil; sprinkle with seasonings and toss gently.
3. Bake about 20 minutes, shaking pan once.
We tend to use asparagus, eggplant, mushrooms, peppers, zucchini, squash, red onion, or a mixture of these.
