"Couldn't decide upon a banana pie or a cocoanut pie so I made this Nov. 2009 with these changes: Added 1 cup loosely packed cocoanut to the cream pie mixture. As I had no whipping cream and it was a stormy day, I used the leftover egg whites as a meringue. I sprinkled some cocoanut over the top before baking the meringue. Baked for 10 minutes at 350 degrees, turned off the oven and left the pie in about 5-7 minutes longer. It was delicious!!!!!!!!" - BunnyB

1 1/3 cWater
2 tbMargarine or butter
6 ozKeebler ready
Whipping cream; whipped
1/2 cFlaked coconut; toasted
3 Egg yolks; beaten
1 14-oz caneagle-brand sweetened
2 mdBananas
3 tbCornstarch
lemon juice; fresh squeezed
1 tsVanilla extract

Banana Coconut Cream Pie Preparation

In heavy saucepan, dissolve cornstarch in water; stir in sweetened condensed Milk and egg yolks. Cook and stir until thickened and bubbly, Remove from heat; add margarine and Vanilla Cool slightly. Fold in coconut. Slice bananas dip in lemon juice and drain, Arrange on bottom of pie crust, Pour filling over bananas; cover. chill 4 hours or until set Top with whipped cream.
