This recipe works good in all my cookie and cake recipes, and only costs about 1/2 the amount of the premixed gluten free mixes.
Combine flours and sift 4 times. Store extra in freezer.
I always make 4 times this recipe and keep most of it in the freezer. It works perfectly in cookies, bars, cakes, quick breads, and pies. I do not use it for yeast bread.
