Pitas with Tzatziki
Original recipe makes Servings
| 2 cupLow fat plain Greek style yogurt |
| 1 cupCucumber; peeled, grated, and spun dry in a salad spinner |
| 4 clovesGarlic; grated |
| 1 teaspoonLemon Juice; freshly squeezed |
| 3/4 teaspoonKosher Salt |
| 1/8 teaspoonground red pepper |
| 6 largewhole wheat pitas |
| 1 tablespoonextra virgin olive oil |
Pitas with Tzatziki Preparation
1. Mix together yogurt, cucumber, garlic, lemon juice, salt, and pepper in a medium bowl. Chill, covered, 1 hour.
2. Brush both sides of pita lightly with oil. Heat in batches in a large skillet over medium heat, 3-4 minutes per side, until golden and puffed. Seve pitas with tzatziki and souvlaki.
