2 cupLow fat plain Greek style yogurt
1 cupCucumber; peeled, grated, and spun dry in a salad spinner
4 clovesGarlic; grated
1 teaspoonLemon Juice; freshly squeezed
3/4 teaspoonKosher Salt
1/8 teaspoonground red pepper
6 largewhole wheat pitas
1 tablespoonextra virgin olive oil

Pitas with Tzatziki Preparation

1. Mix together yogurt, cucumber, garlic, lemon juice, salt, and pepper in a medium bowl. Chill, covered, 1 hour.

2. Brush both sides of pita lightly with oil. Heat in batches in a large skillet over medium heat, 3-4 minutes per side, until golden and puffed. Seve pitas with tzatziki and souvlaki.
