Original recipe makes 4 Servings
1/2 cupred onion; diced
3 tablespoonssherry vinegar
1@15 oz cancannellini beans; drained & rinsed
1/2 cupfresh mint leaves; roughly chopped
1/2 cupred bell pepper; diced
2 tablespoonscapers (small/nonpareil)
2 tablespoonsExtra virgin olive oil
Salt and pepper

White Bean Salad Preparation

1. Mix onion and vinegar in a small bowl and let stand 15 minutes

2. Mix remaining ingredients in a medium bowl.

3. Combine.
