Chickpea and Feta Salad (4)
|2 cupschickpeas; canned, rinsed & drained|
|2 clovesGarlic; finely minced|
|2 tablespoonsScallions; thinly sliced|
|1/2 Red bell pepper; diced|
|2 tablespoonsFresh parsley; finely minced|
|9 Black olives; pitted & chopped|
|1/2 cupFeta cheese; crumbled|
|1 tablespoonExtra virgin olive oil|
|3 tablespoonsFresh lemon juice|
|1/8 teaspoonBlack pepper|
|1 teaspoonLemon zest; for garnish|
Chickpea and Feta Salad (4) Preparation
In a medium bowl, combine chickpeas, garlic, scallions, red pepper, parsley, olives, and feta cheese, toss to combine.
In a small bowl, whisk together oil and lemon juice, pour over chickpea mixture and season to taste with black pepper. Garnish with lemon zest, serve.
yields about 1/2 per serving.
