Lemon sponge pie with a filling described as kind of a cakey textured pudding
Preheat oven to 400(F) degrees.
Blend butter with sugar and flour. Add egg yolks, lemon juice and peel, and milk. Fold in egg whites. Pour into pastry shell
Bake at 400(F) degrees for 15 minutes, then decrease oven temperature to 325 degrees for an additional 25 minutes, until set. Toothpick will come out clean when set.
Traditionally, as I was growing up, we would have two pies to choose from during the Thanksgiving and Christmas holidays. This one and pumpkin. The filling can be described as kind of a cakey textured pudding. I love it!
