1/2 tsSalt
1 1/2 cFlour
1 cRolled oats
2 tsBaking Powder
1 tsBaking soda
2 Eggs
1/2 cSugar
1/4 cCanola oil
1 cMashed bananas; 3 medium
1/4 c1% low-fat milk

Banana Oatmeal Muffins Preparation

In a large bowl measure dry ingredients. Stir to mix. Make a well in center. In a small bowl beat eggs until frothy. Mix in oil, milk and bananas. Pour into well. Stir just until moistened. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake at 400 degrees for 20-25 mins. Source: Companys Coming-Muffins and More by Jean Pare. Great flavor but dry, even when baking for a shorter time. We ended up warming them and adding a little butter to moisten, and they were great! I added allspice for extra flavor, but chocolate chips would be fabulous.

Mine came out a bit dry but perhaps because I used butter instead of oil? Overall yummy! Added choc chips and walnuts.

My son loves oatmeal muffins and hates fruit so what better way then to sneak some fruit into a favourite recipe. This was very good and will save to make again. Also good with a few chocolate chips.
