"I buy organic bananas and when they become overripe I put them in the freezer. When ready to use, I thaw them a little, peel and mash. I used oat milk instead of dairy milk and whole wheat pastry flour for half of the flour. These muffins are delicious and healthful. I will make them again and again. Thank you! "

Ingredients
| 1/2 tsSalt |
| 1 1/2 cFlour |
| 1 cRolled oats |
| 2 tsBaking Powder |
| 1 tsBaking soda |
| 2 Eggs |
| 1/2 cSugar |
| 1/4 cCanola oil |
| 1 cMashed bananas; 3 medium |
| 1/4 c1% low-fat milk |
Banana Oatmeal Muffins Preparation
In a large bowl measure dry ingredients. Stir to mix. Make a well in center. In a small bowl beat eggs until frothy. Mix in oil, milk and bananas. Pour into well. Stir just until moistened. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake at 400 degrees for 20-25 mins. Source: Companys Coming-Muffins and More by Jean Pare.
