1/4 ts Salt
3 bananas; VERY ripe, up to 4
1 c Whole wheat flour
1 Egg equivalent
1 tb Baking Powder
2 tb Sugar; or honey if bananas Are not sweet enough
1 c Wheat bran

Original recipe makes 1



Mix dry ingredients. Mash bananas and add enough milk to make 1.5 cups total. Add egg to bananas. Pour wet over dry ingredients and stir just until mixed. Spoon into 12 lightly greased/pammed muffin cups. Bake at 400 degrees for 20 minutes. Remove from cups while still hot. From: (Diane Durbeck).
