| 2 cansPinto beans; 15.5 ounce; drained and rinsed |
| 1 3/4 cupsLong grain rice; cooked |
| 1/3 cupDry bread crumbs |
| 1 bunchScallions; thinly sliced |
| 1/4 cupFresh Cilantro; chopped |
| 2 largeEggs; lightly beaten |
| 1/3 cupExtra virgin olive oil; divided |
| 8 Wheat hamburger buns |
| Coarse salt; to taste |
| Ground black pepper; to taste |
Pinto and Rice Burgers Preparation
1. In a large bowl, mash beans until a coarse paste forms
2. Add rice, bread crumbs, scallions, cilantro, eggs, salt and pepper
3. Gently fold to combine
4. Form into eight 3/4" patties
5. In a large skillet, heat half the oil over medium-high heat
6. Add half the patties and cook until browned and cooked through (about three minutes per side)
7. Transfer to a wire rack and tent with foil
8. Repeat with remaining oil and patties
9. Serve on buns with desired toppings
