Green Rice Salad
Green Rice Salad Preparation
For vinegrette, whisk together olive oil, tarragon, basil, and white wine vinegar. Set aside.
Cook rice according to package directions. Mix in a little vinegrette to keep rice from sticking. Let cool.
Chop cucumber, green pepper, cilantro, chives, and green onions. Mix together in a medium bowl. Mix in rice. Mix in vinegrette.
Cover and chill.
