Sauteed Spinach and Pine Nuts
Original recipe makes 4 Servings
| 2 teaspooncanola oil |
| 1 tablespoonshallots; minced |
| 1 bag (9 oz)fresh baby spinach |
| 1 tablespoontoasted pine nuts |
| 1/8 teaspoonsalt |
Sauteed Spinach and Pine Nuts Preparation
Heat oil in a large skillet over medium-high heat. Add shallots and saute 2 minutes. Add baby spinach and saute 2 minutes or until spinach wilts. Stir in toasted pine nuts and salt.
