Original recipe makes 4 Servings
2 teaspooncanola oil
1 tablespoonshallots; minced
1 bag (9 oz)fresh baby spinach
1 tablespoontoasted pine nuts
1/8 teaspoonsalt

Sauteed Spinach and Pine Nuts Preparation

Heat oil in a large skillet over medium-high heat. Add shallots and saute 2 minutes. Add baby spinach and saute 2 minutes or until spinach wilts. Stir in toasted pine nuts and salt.
