This recipe isn't authentic, but it's quick and good. Tastes similar to Popeyes Chicken red beans & rice.
1. Put 2 cans of the red beans, water and the sausage, cut into 3 - 4 inch pieces, in a pot and simmer on medium low for about an hour.
2. Remove sausage and mash beans with a potato masher.
3. In a separate pot begin cooking your rice according to the directions on the package.
3. Add sausage back to red beans, add remaining ingredients. Simmer until the rice is ready.
