Suggest a better descriptionBlanch asparagus for 2 minutes, then set aside in an ice bath. In a large saute' pan, over a med-high heat, lightly brown chicken in a little olive oil. Then add peppers and saute' for about 3 minutes. Remove to a plate. Deglaze the pan with the white wine and lemon juice. Reduce to about half (approx. 12 min.) and add garlic. Continue to simmer for 2 min. Then raise heat back up and add chicken, peppers, and asparagus back to the pan. Once up to temp, add spinach. Cook for 2 min, then add pasta and olive oil. Once up to temp, turn off heat and add salt, pepper, and parmesan. Stir enough to coat, then serve. Enjoy!
You can substitute chicken stock for the white wine.
