Pear Chutney

1/2 c green pepper; Finely chopped
1 c crystallized ginger; Chopped
10 c pears; Sliced, firm, ripe, (5 pounds)
3 2-inch long sticks Cinnamon
3 c Cider vinegar
4 c Sugar
1/2 ts Whole allspice
1/2 ts Cloves
1 1/2 c Seedless raisins
1/2 ts Salt

Original recipe makes 8



Place pears and the next 6 ingredients in a saucepan. Tie allspice and cloves in a cloth bag and add along with cinnamon. Cook slowly until pears are tender and mixture is thick, about 1 hour.
