1 1/2 lb Sweet potatoes, cut into
1 ds Pepper and nutmeg
1/2 c Pecans, ground
2 tb Virgin or extra-virgin olive
1/4 c Hot skimmed milk
1/2 c Pecans, chopped
1/2 ts Salt

Original recipe makes 4 Servings



Drain sweet potatoes and mash with a fork, ricer or electric mixer. Add oil, salt, pepper, nutmeg, and milk, beating until light and fluffy. Stir in chopped pecans and shape into 8 flat round patties. Dip both sides into ground pecans to coat. Place on a lightly oiled baking sheet and dot with butter.
