The amount of Sweet Potatoes would be better listed as cups rather than the somewhat vague amount of '4 medium'. I doubled the recipe and ended up with enough filling for 3 pies. The flavor was perfect but the consistency of mine turned more souffl? like, rising 3 inches above the pie tin while baking and then falling completely apart while attempting to serve after it cooled. I'm not a baker, usually, so my chef senses aren't kicking in to tell me what to do differently next time, tho I suspect too much sweet potato and possibly too much beaten egg whites. In any case, the flavor was delicious!

I made this for Thanksgiving and everyone thought it was pumpkin. I put everything in a food processor except the egg white which I did fold in. Awesome pie. Thank you for an easy great pie recipe.
