Sweet and subtle fruit and nut taste. Smells great while cooking!
Place rice in a large saucepan or rice cooker and rinse thoroughly with cold water until water runs clear. Drain. Add 3 cups water, cinnamon sticks, cloves, and salt. Cook in rice cooker or bring to boil over stove, reduce heat to low, cover, and simmer for 20 minutes undisturbed. Set aside.
In a small saucepan over medium high heat combine 1/2 cup water, sugar, and cardamom. Heat until mixture boils and reduces slightly to a syrup. Pour over cooked rice. Stir thoroughly and let sit uncovered if rice is wet.
In small non-stick skillet heat oil. Add almonds and raisins and fry over medium heat, stirring constantly, until almonds turn golden and raisins puff. Gently stir into rice and serve.
