Quick, On-the-Go meal which consists of a bread pocket filled with any contents of your choice.
Pocket Bread
In a large mixing bowl combine 1 1/2 cups flour and the yeast. Combine warm water, oil, salt and sugar. Add to yeast mixture. Beat on low speed of electric mixer for 30 seconds, scraping sides of bowl constantly. Beat 3 minutes at high speed. By hand, stir in enough of the remaining flour to make a moderately stiff dough. Turn dough out on a lightly floured surface. Knead dough about 5 minutes or until smooth and elastic. Cover and let rise 45 minutes.
Punch Down and divide into 12 equal pieces. Shape into balls; cover and let rest 10 minutes. On a lightly floured surface, roll out each dough ball to a five-inch round, beginning at the center and rolling to edges. Be sure your rolling pin DOES NOT roll back and forth or the bread will not puff.
Using three ungreased cookie sheets, place rounds 2 inches apart. Cover; let rise 20 to 30 minutes. Bake at 400 degrees for 10 to 12 minutes. The pocket bread will be puffed and the tops will be an uneven light brown. Cool on a rack for a crisp texture. Cool, enclosed in foil for a chewy texture.
To serve, slice bread partway along one side and fill with your favorite sandwhich mixture.
Taco Filling
Brown hamburger with onion and garlic. Drain and add to meat mixture tomato sauce, salt, chili powder, pepper and sugar. Simmer 15 minutes.
Egg & Cheese Filling
Combine eggs, onion, garlic, tomato sauce, cheese and olives. Mix well. Fill pocket bread with mixture, place in foil, sealing edges. Put on cookie sheet and bake at 300 degrees for 15 to 20 minutes. Serves 6.
