Original recipe makes 1 Servings
Celery stalks -- cut in
PER CUP-----
3 mdCarrots -- cut in chunks
1/2 tsTarragon -- and/or other
1/3 cFresh parsley -- minced
Whole peppercorns
Herb
*gm dietary fiber
30 mlGarlic -- minced
Chunks
3 mdOnions -- cut in chunks
*mg sodium
Bay leaf
6 cWater
*cals

Basic Vegetable Stock (Lf) Preparation

Combine all ingredients in a large soup pot, and bring to a boil. Reduce heat to simmer, cover and let cook for about 1 hours. You may strain the vegetables out and use the clear brot, or put the stock in a blender and puree for a thicker stock, adding a bit more water if necessary. Makes 8 cups.
