Garden zucchini and honey muffins

These muffins use the moisture from yogurt and honey to replace the cup of vegitable oil that is in similar recipes, making them a lot healthier. But they still taste great.

| 2 teaspoonsBaking soda |

| 2 cupsZucchini; shredded |
| 1 Egg |
| 3/4 cupPlain yogurt |
| 1 teaspoonVanilla |
Garden zucchini and honey muffins Preparation
Mix dry ingredients. In a seperate bowl mix honey, zucchini, egg, yogurt, and vanilla.
Pour zucchini mixture into dry ingredients and stir until combined.
Pour into greased muffin pans. Bake at 350 degrees for 18-20 minutes.
