These muffins use the moisture from yogurt and honey to replace the cup of vegitable oil that is in similar recipes, making them a lot healthier. But they still taste great.
Mix dry ingredients. In a separate bowl mix honey, zucchini, egg, yogurt, and vanilla.
Pour zucchini mixture into dry ingredients and stir until combined.
Pour into greased muffin pans. Bake at 350(F) degrees for 18-20 minutes.
