Pasta with bacon, veg and rosemary topping
Original recipe makes 2 Servings
| 250 gramslean bacon; chopped small |
| 1/2 onion; chopped |
| 1 tspgarlic; crushed/chopped |
| 2 tspDried rosemary |
| 1 cupBaby spinach |
| 1 cupZucchini |
| 1 cupMushrooms |
| 1 cupcherry/plum tomatoes |
| 1 1/2 cuppasta |
| 10ml Olive oil |
Pasta with bacon, veg and rosemary topping Preparation
Boil pasta and set aside. Heat olive oil in a non stick frying pan and fry onions and garlic together until onions are brown. Add bacon and fry (I like mine a little crispy). Add rosemary, spinach, zucchini, mushrooms, tomatoes and a dash of water and simmer altogether for about 10 min.
Dish pasta and add bacon mix on top. Bon appetit!
Notes
Substitute any veggies you like in this dish...eggplant or carrots would probably work well too.
