A different take on the usual risotto and good for you too
Fry Onion for 3.4 mins stir in barley cook for a few mins pour in about one third of the warm stock simmer for 20 mins stirring now and then adding more stock as you go five mins before the barley is cooked add the peas then check everything is cooked turn off the heat and allow to sit for a couple of mins then stir in the cheese and most of the chives and then serve with a scattering of chives on top. yum
If liked add cooked prawns or cooked chicken to the dish at the same time as the peas are added.
