32 oz Marinara Spaghetti Sauce
1/3 c Parmesan cheese; grated
1 Egg; lightly beaten
4 md Zucchini; (2 lbs)
1/2 ts Salt
1/4 ts Black Pepper; ground
1/2 c Italian Style Bread Crumbs
1/3 c Mozzarella Cheese; shredded
1 ts Oregano
1 lb Ground beef

Preparation

Preheat oven to 375~F. Trim ends of zucchini. Cut zucchini in half lengthwise. Carefully scoop out centers leaving 1/4" thick shells. Chop pulp (makes about 1 cup); set aside. In a large skillet brown ground beef; drain fat. Stir in reseved zucchini pulp, bread crumbs, Parmesan cheese, oregano, salt, pepper, 1/2 cup marinara sauce and egg; mix well. Place zucchini shells in a shallow baking pan. Spoon meat mixture into shells. Pour remaining marinara sauce over and around zucchini. Cover and bake until zucchini shells are tender, 30 to 35 minutes. Sprinkle with mozzarella cheese. Bake, uncovered, until cheese melts, about 5 minutes. Absolutely wonderful! I subsituted the ground beef with italian sausage to give it a like kick.

Absolutely wonderful! I cut down on the sauce and added italian seasoned canned tomatoes. I also used extra cheese. They were delicious, this will stay in my favorites! Thanks for posting it.

I love this meal! I usually boil the zucchini shells for a few minutes so that they are soft before stuffing them.

Was wonderful, I added Italian sausage for half of ground beef, makes a great main dish when paired with Italian bread and a salad!

I made this for my family and the stuffing was great. I think it would have been better if I cooked the zucchini longer so that it was softer, but we were in a hurry so I couldn't. I'll have to try this out again in the future to see if I can get it right.

I used spicy Italian sausage but only cause I don't really care for hamburger. LOVED this recipe!!!!!! It was great, easy to make and everyone loved it. Thanks for sharing this recipe!!!!!!!!
