Potato dumplings fried with butter and your choice of sauerkraut, cottage cheese or colby longhorn cheese.
Peel, cut and grate potatoes in blender or food processor. Add eggs and salt. Transfer to a large bowl and gradually mix in the flour. Bring a large stock pot of water to a boil. Put a large dipper of the potato mixture onto a saucer. Drop dumplings into boiling water by scraping teaspoonfuls off the saucer. After the water boils again, cook for 15-20 minutes. Remove dumplings from pot with a slotted spoon and start the process again until all dumplings are made.
Fry dumplings in a large skillet with butter and your choice of:
1 can sauerkraut,
1 carton cottage cheese or
2 cups grated colby longhorn cheese
**For a large crowd: (we like to split the dumplings into 3 skillets and make some of each)
5 lbs. potatoes
5 eggs
1 tablespoon salt
6 3/4 cups flour
Saurkraut- 1 lg & 1 sm
Cheese- 3 cups
Cottage Cheese- 1 lg carton
