1 Pieceginger root; 2 inches
1 bnFresh coriander; Chopped
1 Piecelemon grass; Roughly chopped
2 cnCoconut milk
juice of 1 lime
2 lbFilet beef; or sirloin of beef
1 tbSoy sauce
1 bnSpring onions; Chopped
2 Garlic; chopped
2 Fresh chilies; Chopped
2 tbVegetable oil

Beef a la Will Moreland Preparation

Heat a heavy frying pan and sear your piece of meat, remove. Heat the oil in the same pan and saute the spring onions, garlic and ginger until softened. Add the soy sauce, half of the coriander, and the chilies.

Place the sealed meat in a roasting tin. Pour over the fried vegetable mixture. Add the lemongrass and pour the coconut milk and lime juice over the meat. Cook in a preheated oven at 350 degrees for 40 minutes.

Place beef on a serving dish. Strain the sauce, add the rest of the chopped coriander and pour over the meat. Serve immediately.

What did I like about this? The unique flavors! I would never have thought of putting coconut milk on a beef tenderloin roast, let alone to have put garlic, coriander, ginger and onions in the mix as well. The flavors were fantastic. I found the baking time to be too short even for very rare. We cut slices off the end and put the roast back into the oven to continue cooking while we ate the first pieces. We only finished about half the roast, which is still quite rare, so it will be even better tomorrow when we finish baking it and have repeats! I can't wait.
