Suggest a better descriptionLet me preface by saying we use a cast iron skillet for this dish and it goes from cook top to oven. Plus it puts a nice crust on the potatoes. If you prefer you can bake the dish in a casserole dish.
Heat oven to 350 F.
Prepare bacon in whichever method you prefer, saving some of the bacon grease.
Place potatoes in a microwave safe bowl and microwave uncovered for about 9 minutes, stirring every 3 minutes, until thawed.
If using a skillet, add some bacon grease to the pan and add the potatoes. Let them sizzle for about 3 minutes just to form a little crust on them.
Stir in the remaining ingredients, using half the cheese in the mixture and the other half on top.
Bake uncovered 30-35 minutes or until hot in center and bubbly around edges.
