1/4 tsPepper
4 ozbeer; up to 6 oz
1 cBisquick
1/3 cCorn meal

Beer Batter Fish Fry Preparation

Combine dry ingredients and add beer to get a sticky consistency for dipping. Salt fish and dip in batter. Deep fry at 375 degrees until fish is golden brown. Note: Fillets of most fish including striped bass, flounder, catfish, walleye, white bass, black bass, snapper, red fish, grouper, and white perch will work. Husband & I liked, but kids didn't like the flavor of the beer, as they could taste a hint of it. I had to add almost a whole 12 oz can of beer to get the batter the right consistancy.

It took about 10 oz beer for my dry ingredients to become the right consistency. It says to deep fry, but I tried frying in an iron skillet. Batter came off, stuck to pan. Patting my Mahi fillets w/ a paper towel before dipping helped to keep the batter from sliding off as much, but still didn't stick when fried (and my batter was a good thickness). I liked the taste of the batter. I will try again, with a small pan & deep fry (I don't have a deep fryer).

Pne other thing, my fish did not come out like the picture. I had a hard time coating the fish. I used 6 oz beer. And followed recipe to detail. The fish was not coated entirely.
