Low cal, but you'd never notice!!!
just work in order, ie: start the onions sauteing in the EVOO. get the pasta water boiling. once the onions are cooked enough for your taste, add the garlic and soon after, the sun-dried tomato. Then the broccoli gets added. I slightly "stir fry" it into the mixture, then add the broth. By now your pasta is near done. take out 2 ladle-fulls of pasta water. you may only want one, but have the other as a back-up addition. Drain the pasta. Don't worry that it will get cold, you'll be tossing it back into the broccoli mixture. Add you shrimp and cook JUST enough. Toss in your drained pasta. top with Parm Cheese if you'd like. I do like! :)
Alter it as you like! This is a wonderfully versatile recipe, chicken instead of shrimp. change up the veggies (roasted cauliflower is great!). add olives and feta, altho the low cal heading will be out the window! I have also added heavy cream instead of the pasta water. Ditto on the "low-cal" heading. haha
Salt and pepper are according to your taste. My Mom-in-law (who taught me the basic recipe that I embellished) tosses in hot pepper flakes.
Confession: I use double the garlic that I said in the recipe. Ya' know what they say, 2 heads are better than one! haha
* cut whole head in half side to side. Put in microwave for 50 seconds to a minute, depending on how mild you want the garlic. Time depends on your microwaves strength!
