White bread, drizzled with honey and sprinkled with mint, straight from the crock pot.
Unbelievable? TRY IT!
Pour water into a large glass (or plastic) mixing bowl (make sure you have a LID for the bowl, or use a bowl that can accommodate an aluminum foil covering). Add salt and yeast. Pour in ALL of the flour. Using a wooden spoon, stir and fold until all of the flour is incorporated. It should be a tacky (but not sticky) dough that is elastic when pulled.
Leave the dough in the mixing bowl.
Cover with lid, but DO NOT secure the lid. The gasses need to be able to escape.
Place in an area in which the temperature will be constant, preferably not a cold area.
Allow to rise until doubled in size, about 2 hours (more or less.)
DO NOT PUNCH THE DOUGH DOWN.
Liberally flour your work surface. Pull the dough out (with floured hands) and place into surface. Pull dough and fold. Fold in all directions, turn over and repeat.
Now form the dough into a ball, adding more flour as needed.
To form the ball: Turn the dough under, stretching the top. The bottom will still look sort of mangled, but that is okay. Its the bottom.
Turn your crock pot on HIGH.
Pour 1/8th of a cup of tap water into the crock pot.
Place your formed dough onto a sheet of parchment paper. Place the parchment paper in the crock pot, so that the water is underneath the parchment paper. (This will be for steam)
Cook for about an hour and check the bread. If it is not coloring yet, continue cooking. In my area of the country (temperatures etc.) it took me about 2 hours to get a fully baked bread. The top did not brown.
If you prefer a browned top, then finish it under a broiler on low for about 4 minutes.
Drizzle with honey and allow to cool on a plate, or wire rack.
Cut with a serrated knife, butter and serve.
ALLOW TO COOL COMPLETELY BEFORE CUTTING THE LOAF. If you do not, it may come out gummy.
