For Orchette Mac n cheese
Heat the milk, cream in a pot on low heat till just before boiling, add cayenne, pepper, nutmeg, turmeric and salt
Slowly add Wondra Flour, whisking to thicken & keeping smooth. Cook for 2 minutes
Slowly whisk in all the cheese and cook till melted on very low heat
Put into quart plastic containers and chill
Use as a base for Mac and cheese
