1 smallOnion; - chopped
2 clovesgarlic; - chopped
1 tablespoonVegetable oil
1 cupCarrots; - chopped
2 cupsWater
3 mediumHabanero chilies; - chopped
3 tablespoonsLme juice; - fresh squeezed
3 tablespoonsWhite vinegar; - or cider vinegar if preferred
1/2 teaspoonSalt; - to taste

Belizian Style Habanero Hot Sauce Preparation

Saute onion in oil until soft. Add carrots and water.Bring to boil,reduce heat,and simmer until the carrots are soft. Remove from heat . Add chilies,lime juice and salt to the carrot mixture. Place in processor and puree until smooth.Pour into sterilized jars and seal.

This makes about 36 (1/2 tsp) servings.

Other than 35mg of sodium and 33mg of potassium, the sauce is nutritionally negligible.

Notes

Easy to make BUT, make sure you have plenty of ventination in your kitchen. The vapors from cooking habaneros are similar to pepper spray.

Not very flavorful. I made it and was very disappointed. I did, however, make some huge modifications to it and came out with a great sauce. I pretty much just changed the entire recipe haha. The carrots and habaneros do not go well together at all. I had to add ketchup and tomatoes along with more onion, more garlic, more vinegar, more water, some shallots, and a little bit of tequilla. Also, the habaneros should be put in when the carrots and water is, so they have time to soften up. I will post my modified recipe so you all can have a much better sauce!

This is quite authentic. If you want to get some without all the mess look for 'Marie Sharp's'. That's the, de facto, national brand of sauce in Belize. But homemade is always better so give this recipe a try.
