| 2 tbTarragon |
| 2 tbFresh Lemon Juice |
| 1/8 tsGround red pepper |
| 1/2 cButter; melted |
| 2 tbVinegar |
| 1 tbTarragon |
| 3 Egg yolks |
| 2 tbWhite wine |
| 1 tbChopped shallots |
Bernaise Sauce for Steak Preparation
In a small saucepan, combine vinegar, tarragon, and shallots. Cook rapidly until liquid is almost totally reduced. In a blender or processor combine egg yolks, lemon juice and pepper.
