"Awesome!!! I tweaked it to make it wheat free and 1) you can't tell the difference 2) they truly are the best banana muffins ever (at least according to me, my 7 year old banana muffin connoisseur, and 6 year old banana muffin hater...she says she only likes these!). To make gluten free, I replaced the all purpose flour with gluten free Bisquick and omitted the baking soda (since it's already in the Bisquick). We had 4 bananas, that needed to go so I also added a 1/4 c more Bisquick to make up for the extra banana. We made some with the brown sugar and some without. They are BOTH delicious!!"- jjmcain

Preheat oven to 375F / 190C / Gas Mark 5
Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake for 20 min.
I also remember my mother used to add brown sugar to the tops of the muffins before baking. This made them crunchy on top, but I haven't tried it myself.

dmanderson1 1 month agoI actually followed all instructions except I mixed it all in my ninja. Didn't make a hole, just added as directed. I also added 1-1/2 c pecans because we LOVE nuts. Placed the mix in mini loaf pans......FANTASTIC AND INCREDIBLY MOIST!!! I can see freezing and giving as gifts this holiday.

rachelroonut2012 2 months agoThese muffins are delicious! Instead of using sugar and butter I substituted honey and applesauce. I added some walnuts and sprinkled just a teeny bit of brown sugar on the tops. Very moist. Excellent!

kirstn 2 months agoDelicious! I made a bunch of additions/changes, though. Instead of muffins, I made this as one loaf (took 50 minutes to bake at 190 C). I, too, added 1 C of oatmeal oats (and one extra banana so it wouldn't get dry because of the oats). I didn't have an egg so I used 1/4 C gram (chickpea) flour + 1/4 C whole milk (vegans could use vegan milk)). Added 1tsp cinnamon, 1/2 teaspoon nutmeg, some crsushed cardamom, sunflower seeds, and dates. Absolutely delicious!!!

Daydreamer1227 4 months agoThe muffins didn't rise because of the banana i guess. They tasted ok but the batter was weird. I added extra flour because i could tell it wasn't enough. I should've added more.
