"Awesome!!! I tweaked it to make it wheat free and 1) you can't tell the difference 2) they truly are the best banana muffins ever (at least according to me, my 7 year old banana muffin connoisseur, and 6 year old banana muffin hater...she says she only likes these!). To make gluten free, I replaced the all purpose flour with gluten free Bisquick and omitted the baking soda (since it's already in the Bisquick). We had 4 bananas, that needed to go so I also added a 1/4 c more Bisquick to make up for the extra banana. We made some with the brown sugar and some without. They are BOTH delicious!!" - jjmcain

Best Ever Banana Muffins #1 Preparation

Preheat oven to 375F / 190C / Gas Mark 5

Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake for 20 min.

I also remember my mother used to add brown sugar to the tops of the muffins before baking. This made them crunchy on top, but I haven't tried it myself.

    Very very yummy! So easy to make too. I added 1 tsp of vanilla extract and cinnamon, and sprinkled brown sugar on top before baking. They came out perfect! Thanks for a great easy recipe. Will definitely do those muffins regularly.

    I just finished baking the first batch of these. I did make a few changes to the recipe though. I used 4 bananas and doubled the rest of the ingredients. They are moist and really good. I also added the brown sugar to the top... it made the top a little crunchy and sweet.

    Tasty but not done! I followed the recipe exactly and the outside of the muffins were starting to get really brown so I had to take them out before they started to burn. I let them cool off for ten minutes... Thetot

    Just made these for myself and my son. Moist is not a good description, wet is more like it. I followed the recipe as written except for the addition of 1/2 cup of chopped pecans and 1/2 cup of chocolate chips. When I popped one out of the pan after 20 minutes it was completely wet on the bottom. I ate it anyway, it was too mooshed up to put back in the pan. I put the rest back for another 6 minutes for a total of 26 minutes and they were still very loose and wet when removing from the pan. While researching this on BigOven online instead of through my android device I discovered this recipe is listed as 'Best Ever Banana Muffins #1' I found another recipe entitled 'Best Ever Banana Muffins' without the #1. That recipe is pretty much the same as this except it calls for a 1/4 cup more sugar and double the flour, 11/2 cups instead of just 3/4. I think that recipe would be much drier and more like a real muffin instead of a glob of goo. The other recipe comes from Robin Hood flour and I believe this recipe is just a poor transcription of that original one. I will make that one the next time. Also their directions say make a well in the dry ingredients and add the wet to the dry instead of the other way around as this recipe states. Adding wet to dry is how all baking recipes are written. I tried demerara sugar which is unrefined cane sugar that consists of large brown crystals as a topping on these muffins and it was the high point of the recipe. The crystals are supposed to survive baking and make for a nice crunchy topping. They did, try demerara IMHO I think you will like it.

    I made these muffins for my church and they were delicious. Everyone loved it and it did not last. I couldn't believe how moist and delicious they were. I made 2 batches and ate 4 muffins in an hour. I did add cinnamon, nutmeg, vanilla extract and chocolate chips to one batch.
