3 lb Green cabbage
1/2 c Water
1 ts Sugar
4 tb Unsalted butter
1/2 ts Black Pepper; freshly ground
; ( 1/2 Stick)
1 tb Salt

Preparation

1. Cut the cabbage into quarters. Remove any wilted and discolored outer leaves and cut out the core from the cabbage pieces. Cut the cabbage into a large (1-inch) dice. 2. Heat the butter and water to simmering in a 4-quart pot. Stir in the cabbage, sugar, salt, and pepper. Cover the pot and cook the cabbage, stirring occasionally, until the cabbage is tender, about 25 minutes. As stated, this is not 100% steamed. Before serving, I drained the cabbage in a colander to get rid of the cooking liquid. The flavor was great.
