Great backyard/potluck dish.
Place bulgur in a bowl, pour over 2 cups of boiling water. Cover and let stand for about 25 minutes, until grain is softened and water has been absorbed. Drain if necessary.
Combine lemon juice, oil, garlic, salt and pepper in a small bowl. Add parsley, mint, tomatoes, cucumber, scallions and fresh sage (if using) to bulgur. Serve at room temperature or chll for at least 1 hour to serve.
Adjust fresh herbs as preferred. May need to add a little more lemon juice or oil. Store in fridge for up to 4 days.
