3/4 tsBaking soda
1 1/2 cCoarse salt
3 Bay Leaves
1 tsWhite pepper
2 1/2 tbBrown sugar
1 1/2 tbcoriander; Crushed
2 cBrown vinegar; (malt type)

Biltong Preparation

Biltong can be made from beef, venison or ostrich. The meat is cut into strips, packed in salt & spices, & then hung up to dry. It is normally very hard when dry (almost black on the outside & a dark red on the inside), & is normally eaten by slicing thin strips across the grain of the stick of biltong. It is also used in a powdered form in cooking & on sandwiches. This recipe is for 25 pounds of beef. Mix ingredients. Layer beef in large enough container, tossing some of the mixture over each layer. Make sure the salt is distributed evenly over the individual layers. This is a good recipe. I am a huge fan of biltong. Having tried it several times in the past. If you like beef jerky, try making your own biltong. The beauty of recipes like this, you can tweak it and make your own variation. Be patient when making biltong. It does take a while to make. Allow a couple of days at least. If you want to see a video of making biltong, check out www.thezashow.com there is a video link at the top of the page. This is a very short video, however, it is very informative, it runs you through the process from seasoning the meat to building your own biltong box. (This is particularly good if you are more a visual person) The ZA (pronounced Zed A), Show is a weekly podcast, and is occasionally hosting videocasts. The host is a friend, this is a great show to listen to. If you want to learn more about South African culture, check this lekker podcast out. At the very least, check out the biltong video. You won't be disappointed.
