Suggest a better descriptionIn saucepan, combine quinoa, water, and 1 tablespoon of oil. Bring to boil and simmer on loe heat for 20 minutes. Cover and let stand for 5 minutes. Fluff and let cool to room temperature
In small bowl, whisk together lime zest, lime juice, and 1 tablespoon oil.
Transfer quinoa to a bowl. Add beans, bell peppers, cucumber, tomato, and cilantro. Drizzle with lime mixture and toss.
Top with cilantro leaves and serve.
