Heat oven to 375 degrees. In a large mixing bowl, combine yogurt, sugars, butter, shortening and vanilla. With a hand held mixer beat at medium speed until well blended. Add flour, baking soda and salt. Beat at low speed until soft dough forms. Stir in granola, chips, coconut and walnuts. Drop by heaping teaspoons 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes, or until set. Let cool for 1 minute before removing. Cool completely before storing.
Check your oven temperature with an over thermometer for correct temperature. Keep an eye on cookies as they bake as ovens will vary with the type of cookie sheet you are using.
