3 Leek leaves
1 stalkCelery
4 Parsley; stems
1 sprigFresh thyme
1 Bay leaf

Standard Bouquet Garni Preparation

cut the celery in half, place herbs in the center, then wrap leek leaves around the outside. tie with butchers string and toss in a stock or soup or tie to the handle NOTES : will season approx 1 gallon stock.
